Friday's Favorites



I have decided that each Friday I will share with you one of my favorite recipes.

If you like it spicy, this recipe is sure to warm you up on a blustery day such as this!

Penne' Alla Arrabiata
(Angry Sauce)

Ingredients: 8-10 whole cloves of garlic
1 large can tomatoe paste
3 red hot chillies
1 bunch fresh basil leaves
1 tablespoon oregano or to taste
3 pinches sugar 3 pinches black pepper 3 pinches salt
2 cans diced tomatoes
Grated Italian cheeses
4 Hot Italian sausages
Penne' noodles
Olive oil


In a deep frying pan cover your garlic cloves and peppers(remove seeds, or not if you like it extra hot )in olive oil and slow fry until golden on very low heat, once browned remove from pan and set aside.

Quick fry your basil in the oil left in the pan (it should turn dark and crispy) remove from pan and chop it up and set aside with garlic and peppers.

Chop the sausages up or remove skin if you prefer and fry until browned and fully cooked, remove from pan.

Boil your pasta while you are finishing your sauce.

In your frying pan add tomatoes and tomatoe paste and add the garlic,basil,oregano, hot peppers and sausage and 3 pinches of each : sugar, salt and pepper stir and taste between additions once the flavor is how you like it, stop adding(I use the 3 large pinches of each).This is the time to add more hot peppers or oregano if you feel it is needed.

Pene' pasta should be firm and drained well.

This recipe makes about 2 litres of sauce that can be frozen.

Once you stir penne' noodles into the amount of sauce you have kept out to use for your meal top with grated fresh Italian cheeses(Parmesan, Asiago & Mozzarella).

Serve with garlic bread, caesar salad and a glass of red wine.

  2. It is a hot recipe but you can tame it down with fewer hot peppers
