I can't tell you how much watching these two in the kitchen made my heart sing... watching this video I took of my little earth angel and my significant other cooking Valentine's Dinner together last week...I hope this brings a smile to your lips! I love it, wonderful  memories are made of moments like these.

Well, it has been a very busy weekend and this morning I promised myself that I would get back into the routine of walking each morning and night but unfortunately the rain is pouring down out there...not going to start today obviously.

Today is a good day just to stay in and cuddle up with a good book.
In my case it will be with the good book as I have packed away all my books from my bookshelf , I am in need of some new reading material.
I read alot of biographies and autobiographies.

Anyone have any suggestions for a good book to read?

This past week I have had a wonderful time with my little earth angel.

We have spent time outside enjoying the snow and sliding down the hill her Poppa Dew built up for her .
We have gone for long walks, rode on the crazy carpet on the icy yard, made beef, vegetable & noodle soup,spent time visiting family and friends,saw how candy floss was made and even got to sample some, took a trip over to the next town and shopped together,watched Beverly Hills Chihuahua,The Flinstones movie Viva Rock Vegas, made shadow figures on the ceiling with the flashlight at bedtimes, told great stories, sang songs,danced, played dress-up,blew bubbles, played with the cat, made pizza, played with her leapfrog game, learned a few more signs in sign language, told jokes and many more things together.

I enjoy her so much when she is here and she is such a pleasure to be around.
Once She goes home my house will feel pretty empty without her here.

Poppie's Bed

Today sitting with my granddaughter she turns to me and says "Grandma, can we go next door to Poppie and Nanny's so I can have a ride on Poppie's bed?"
Grandma: "A ride on the bed?"
Gretchen: "Yes, we can shake like a milkshake! LOL"
Apparently she likes the massager in the bed.

The picture here was at Christmas, the first time she got on the bed and Poppie turned on the massager, apparently Kate enjoyed it too!
Ever since she asks to get on the bed and go for a ride.

Harvard Beets

 I decided to make homemade harvard beets and compare them to the canned ones just to see if there was that much of a difference in the taste.
Guess what, homemade harvard beets won hands down!
That is not to say the canned ones were not good, they were but not as good as homemade.
I hope you enjoy these beets as much as I did.

                         Harvard Beets

2 1/2 cups beets boiled, sliced or diced (I diced mine)
Blend 2 tablespoons of sugar,1 tablespoon of cornstarch,and 1/2 teaspoon of salt in a pan
Add 1/4 cup of vinegar,1/4 teaspoon of grated orange rind,1/2 cup of beet juice (beet water)and cook until thickened stirring constantly the sauce will  become clear instead of cloudy from the cornstarch
Stir in 3 tablespoons of orange juice  and 2 tablespoons of butter and the beets
cover and cook on low for 10 minutes.
This amount serves 5-6 people and can also be canned while hot

Making Pizza Dough With Grandma




This past weekend I had the pleasure of spending it with my little earth angel.
We spent some time making pizza dough, as you can tell by the picture Gretchen had a ball.
Unfortunately I did not think to take pictures of the finished product .
Gretchen did a great job making  panzerotto and a pizza for her great grandparents and a pizza to take home for her Mommy and her to share (by the time she left Grandma's she had half of the pizza she made for her and her Mommy gone).
This recipe was shared with me in 1976 by a chef in Disneyworld and has continued to be my go to pizza dough recipe ever since.


                                                      Pizza Dough

Mix together 5 1/2 cups of flour and 2 teaspoons of salt in a large mixing bowl
In a measuring cup put 2 cups of warm (not hot) water, 2 teaspoons of sugar and mix-up
float 1/2 teaspoon of dry yeast on top
Set aside until yeast works (about 10 minutes)
Add 3 tablespoons of olive oil to the water,salt,yeast mixture and add wet to dry ingredients and mix well.
Place dough in well oiled bowl and cover with a tea towel let stand covered until dough doubles in bulk.
Punch down and divide into balls for pizza ( makes 8 small pizza's or 1 party pizza)
This dough can be frozen.
Roll out dough balls thin brush with olive oil, then add your pizza sauce and all your favorite toppings
Remember less is more on these pizza's when made thin.
If making panzo's fill  half the pizza shell and fold over and seal edges.
As Gretchen pointed out to me" they look like perogies,really,really big,big as your head!"
Preheat oven to 500 degrees
When the pizza is brown it is done!
Let sit for 5 minutes before cutting to allow the cheese to set-up a bit.

Peanut Brittle

Today I made a batch of peanut brittle and decided to share this wonderful recipe with you.
When I was 11 my family took a trip to New Brunswick and this was one of the recipes that was on a placemat at one of the restaurants we went to.
Mom tried it when we got home and this recipe has stayed in our family ever since.

Butter Brittle

Use a heavy bottom pan and on medium high heat melt down 3 cups of white sugar stirring constantly.
The sugar will clump up and then reduce heat and let melt and turn deep brown (not burnt)
stir this mixture constantly or it will burn.
Once sugar is melted stir in 2 cups of salted peanuts and 1/4 cup of butter
Mix well and pour into well greased metal pan
Cool, crack and enjoy!
