Cupcakes!

On the weekend I went to a friend's birthday celebrations and brought with me cupcakes I had made to use as a birthday cake.
It seems to me it is the easiest way to serve up cake and not make a pile of dishes...besides who doesn't love finger food?
While I was making these little lovelies my icing bag finally gave up the ghost so to speak. One of the last cupcakes I was icing ended up with a blob of icing and the tip off my icing bag . The end split open around the tip...Mom was quite happy for the boo boo as she got to eat the messy one.

INGREDIENTS

  • 3/4 cup unsweetened cocoa powder
  • 3/4 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 3/4 cup (1 1/2 sticks) unsalted butter, room temperature
  • 1 cup sugar
    3 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup sour cream

  • I use the vanilla icing recipe and add melted chocolate squares to make the chocolate icing.

Life Calls

I know that I have been very neglectful in writing my blog, but as you know life happens!

I have been very busy, my Mother has been sick with MRSA in her lungs and with her severe emphysema she has had a difficult time of it and is still not out of the woods but looking better than she has in the past year.
At the end of this month she goes for another CAT Scan and sees the Infection Control Specialist and Oncologist.
I am hoping for her sake that this is the end of antibiotics, prednisone and isolation.
I know that this is a life long affliction that will only go into a remission and flare up for the rest of her life but this has been the longest I can ever remember her ever being ill.

I have had more than a few things happen in my life since last here.
My hubby left when I asked him to find some work that has an income we could rely on as he hasn't worked in 5 years. His reply was ok I will be out tomorrow and so he left last Christmas which definitely took me by surprise and broke my heart.
My so called best friend led me to believe she was not coming to visit ( she stayed with us each time she was in town) that she was still in Thunderbay when she was staying with my hubby.
I found out when I dropped by to tell him she was not coming and he informed me that she had been there already for a week and a half with him.
I asked to use his bathroom and when I went up to his apartment I saw she had bras and panties inside the door on his table and a slinky nightie hanging off his bedroom door.
I didn't know what to say except " looks like someone has plans for you" and I left feeling extremely hurt.

The next time I contacted him to meet to take our granddaughter out for lunch he informed me he no longer wanted to talk to me or ever want to see me again.
I was and am still confused about why he all of a sudden decided to not see or talk to me again...I guess he finds it easy to throw 17 years away that easy.

I have been busy at the radio station going to many jamborees and events representing the radio station.
I have also been crocheting a blanket for this winter for myself as I have given away everything I have ever made and decided this one will be for me...until someone wants it  of course.

My youngest son is getting married on October 1st and I am looking forward to going as my eldest was married in Jamaica and I was unable to afford such a trip they were kind enough to have it Skyped for those of us unable to take the trip.
This wedding is a 20 minute drive for me so I will be there with bells on!

September has started out being nice and cool with rain which is welcomed after the drought and the high temperatures we have experienced this past summer.

I have spent some time this summer with my granddaughter having picnics, swimming and of course travelling to spend time with my eldest son and his wife...she loves her Uncle Blair he is the apple of her eye.
